How to scale recipe servings up or down
To scale a recipe, divide the servings you want by the servings the recipe makes, then multiply every ingredient by that factor. Halving a 4-serving recipe is a factor of 0.5; making 6 servings is 1.5.
Example: 4-serving tomato soup
Factor = servings you want ÷ 4

What not to multiply straight
- Salt and strong seasonings: add a little less than the factor says, then taste.
- Baking powder and yeast: big factors can throw off the ratio. Baking in separate batches is safer.
- Cooking time and pan size: more food usually needs a bigger pan and more time.
